The Institute of Food Technologists Annual Meeting + Food Expo took place in Chicago, Ill. from July 17 to 20.

Food in Canada
was at the show where more than 1,000 exhibiting companies highlighted or launched myriad products.

• At the Ocean Nutrition Canada booth, the company announced that it has partnered with GAT Food Essentials to offer a superior microencapsulated emulsion.

The new emulsion offering is a liquid functional food ingredient made up of microencapsulated omega-3 (EPA/DHA) from fish oil.

It’s cream coloured, self-emulsifying and easily miscible in water with taste and smell masked.

The companies say the ONC GAT EPA/DHA shows excellent process and product stability characteristics and sensorial properties and is suitable for many types of food and beverage applications.

The ONC GAT EPA/DHA is stable in food and beverage applications (ambient and chilled) at pH >3.6 and is kosher certified.

Teawolf presented its wolfberry distillate in a Wolfberry Tea beverage and its 10-fold vanilla and premium dark chocolate extract in a chocolate milk (with no cocoa powder).

Its new products included a premium black and green tea extracts, black and green tea distillates, 2-fold, 10-fold and 32-fold Madagascar Bourbon and other pure vanilla extracts, coffee distillate, wolfberry (goji) distillate, and orange peel distillate.

Teawolf offers hundreds of different tea products. The company imports tea from around the world to produce extracts, distillates, concentrates, essences, and blends.

Teawolf also has a line of more than 200 botanical formulas, many of which are currently sold as tinctures available for retail sale in Canada under the SpagoMed brand, and numerous offerings for the “healthy aging” category. 

The company also announced a new distribution partnership with Premium Ingredients International to expand national distribution of its products.

MGP Ingredients Inc. highlighted its Arise 5000 and Fibersym RW.

Arise 5000 wheat protein isolates deliver processing benefits and finished product attributes to a host of food formulations, including fresh and frozen bakery products, pasta, noodles and coating systems.
Arise benefits dough processing through reduced mix time, increased water absorption and increased processing tolerance for improved volume, symmetry and cell structure.

It performs as a moisture and fat barrier due to its unique film-forming properties that increase product yields, enhance crispness and extend product shelf life.

Fibersym RW is a highly effective resistant wheat starch that provides a simple and convenient solution to boost dietary fibre in flour-based products including bread, rolls, bagels, tortillas, cookies, crackers, pasta and bakery mixes.

Its low water-holding capacity simplifies formulation and processing steps and enhances crispness. Its high dietary fibre level and prebiotic properties enhance nutritional value.

ADM / Matsutani LLC showcased its Fibersol-2 for cereals and snacks and sauces, dressings and dips.

The company says using Fibersol-2 in snack products increases total soluble fibre.

Fibersol-2 also requires minimal formulation and process adjustments, is heat stable, has no added flavour or taste, is colour neutral, adds minimal viscosity and is compatible in reduced sugar, sugar-free and no sugar added applications.

Fibersol-2 in cereals enhances the dietary fibre content and can be done through the addition of Fibersol-2 into the base cereal or through cereal coatings.

Fibersol-2 in sauces, dressings and dips also enhances the dietary fibre content.

CEM Corporation unveiled its Smart Turbo for rapid and accurate moisture and solids analysis.

The Smart Turbo features easy-to-use software that comes in five languages.

The company says up to 300 results can be stored to perform statistical analysis.

Calibration is sample independent and once calibrated there is never a need to update the calibration model.

The Smart Turbo can accurately analyze a variety of sample types including solids, powders or slurries in a wide range of applications including difficult or temperature-sensitive samples.

The company also adds that the Smart Turbo is the fastest microwave drying system available. Samples reach optimal drying temperature in less than five seconds.

The company also highlighted its Discover SP-D pressurized microwave digestion and Smart Trac II rapid analysis system.

The Discover SP-D comes with ActiVent Technology, which automatically controls vessel pressure; PowerMAX simultaneous cooling technology; and has full pressure and temperature control for each sample.

The Smart Trac II rapid analysis system is geared to moisture/solids, fats and oils.

It partners advanced, high-performance NMR technology with the fast, reliable drying capability of the Smart Turbo Microwave Moisture/Solids Analyzer to create a system that yields fast, accurate results without solvents or calibration.

Martek introduced its new DHA emulsion technology for shelf-stable beverages.

The company says the technology is designed for use in a variety of juice products.

The DHA emulsion technology works well with other typical ingredients and can be added directly to the standard formulating process for juice beverages.

Martek says it has successfully fortified juice drinks with life’sDHA with no impact on the final product’s sensory characteristics.

The DHA emulsion technology is eco-friendly, contaminant-free (no PCBs and no mercury), it has Food and Drug Administration GRAS status, and it’s produced in a cGMP facility.
