Lallemand acquires U.S. yeast producer

Montreal-based Lallemand Inc. has completed the acquisition of Rhinelander, Wis.-based Lake States Yeast Division from the Wausau Paper Group.
According to a press release on Lallemand’s website, Lake States Yeast LLC will operate as a separate unit within Lallemand, but its product portfolio will be integrated in the Lallemand Bio-Ingredients division complementing the inactive yeasts and yeast extracts produced in Montreal, Estonia and Denmark.
Lallemand is a privately held Canadian company that develops, produces and markets yeasts and bacteria.
The company has four major divisions:
• North American Bakers Yeast and Ingredients
• European Yeast
• Lallemand Africa
The company’s Bio-Ingredients division was created to produce value-added products to complement the growing need in savoury and nutritional markets.
About Lake States
Lake States develops yeasts for processed foods, pet foods and industrial fermentations. It has a full line of dried Torula yeast products.
