Kalamazoo, Mich. – Kalsec Inc. has introduced the Kalsec Duralox Oxidation Management System to help food manufacturers incorporate omega-3s into flavour-sensitive applications without risking high oxidation.
In a fish oil emulsion system used for a dairy application, a Kalsec Duralox Oxidation Management System reduced hydroperoxide formation by 62 per cent compared to the control.
Hydroperoxides are precursors to off-flavour and odour formation in foods and beverages.
The high concentration of polyunsaturated fatty acids (PUFA) in marine oils makes these oils extremely susceptible to oxidation, resulting in free radical formation, off-flavours and odours, and reduced shelf life.
The company says Duralox Oxidation Management Systems are a combination of antioxidants designed to provide oxidative stability for specific processing conditions and applications.
