Kalsec Inc. offers its garlic extracts, which can replace dehydrated garlic powders and granules in many food systems. The company says the extracts can offer cost savings.
The company says processors can completely replace garlic and onion powder without there being a change in flavour. And both are also retort stable. In baking, loss of flavour can be minimized by incorporating the extracts into the fat or oil portion of the formulation.
