Ingredion’s new Novation Endura 0100 functional starch can withstand harsh processing and won’t mask delicate flavours
Bridgewater, N.J. / Brampton, Ont. – Ingredion has introduced the Novation Endura series of new functional native starches.
The company says the series will advance the ability of functional native starches to withstand harsh processing conditions, such as UHT, HTST, homogenization, high heat, high shear and long cooking time.
The first of the series is Novation Endura 0100 starch, which also allows for a clean label.
The Endura 0100 can also help keep product texture appealing despite high heat and high shear in processing, and help maintain shelf life, whether the product is ambient, chilled or frozen.
Also, Endura 0100 has a clean flavour profile so it won’t mask even delicate flavours.
The company says it’s ideal for use in yogurts, dairy desserts, dressings, frozen and chilled prepared meals, and UHT soups, sauces and gravies in aseptic packages.
