International Agriculture Group has launched NuBana Green Banana Flour.
The company says NuBana is a neutral tasting fruit flour that has a different starch structure than starch from corn, potato, tapioca or other plants.
NuBana won’t absorb water from the environment and it won’t clump while stored.
The company explains that freshly harvested green bananas are rich in starch, which is known as resistant starch. It naturally resists digestion and is an insoluble dietary fibre. NuBana is also high in potassium and magnesium.
The flour doesn’t contain gluten so it’s ideal for gluten-free applications. NuBana can replace high glycemic flours like rice and potato flour, says the company. It can also eliminate the need for binders and other hydrocolloids, resulting in better nutrition and clean labels.
It can replace wheat flour or maltodextrin and is ideal for applications that require viscosity, adhesion or water-binding. This includes beverages, pasta, puddings, coatings, cereal bars, fruit fillings, sauces and salad dressings, meats and instant food.
