New sake brewery a first for Toronto and Eastern North America


Toronto – A sake brewery is all set to open tomorrow and will be a first for the city and for Eastern North America.

The Ontario Spring Water Sake Company will be opening its brewery, retail store and tasting bar to the public in the city’s historic Distillery District.

The company says its sake has a “fresh and delightful” flavour and is made by using spring water from Northern Ontario.

The brewery began its operations in February with the help of the Miyasaka Brewing Co. Ltd., whose operations in Japan date back to the 1600s. It currently produces sake under the Masumi and Miyasaka brands.

The company says it connected with consulting master sake brewer, Yoshiko Takahashi, through the team at Miyasaka. Takahashi is an award-winning brewmaster from the Nagano region of Japan and has been in the city the last few months to help with the start-up.

Ontario Spring Water Sake Company is a member of the Brewing Society of Japan and the first member of the Society located in Canada.
