D.D. Williamson has developed an acid-proof, certified organic caramel colour for the North American marketplace. The company says the new product provides stability below pH 2.5 and in alcohol up to 65 per cent alcohol by volume.

Caramel Color 820 is minimally processed and demonstrates superior stability in acid compared to other certified organic caramel colours.

Customers using the new colouring can label “organic caramel colour” on ingredient declarations in the U.S. and also meet the requirements of Canadian organic regulations.

D.D. Williamson says it will include the USDA organic seal in conjunction with the Quality Assurance International (QAI) mark on its own labels. USDA has accredited QAI as a certifying agent for the National Organic Program (NOP).
