New Century, Kansas – The DuPont Danisco ingredient range has a new addition.
DuPont announced the launch of Guardian Chelox L, an alternative to synthetic metal chelators such as EDTA.
The company explains that other natural ingredients that help delay oxidation do so by providing free-radical scavenging.
But in order to rival the antioxidant activity of synthetic alternatives (such as EDTA, BHA or BHT), scavenging must be paired with metal chelation. Guardian Chelox L can provide a natural alternative with strong metal chelating activity.
The company says the benefits to manufacturers include:
• Clean, friendly labelling;
• Consistent product quality;
• Easy to handle and apply;
• Low colour / flavour impact; and
• All components are GRAS.
The ingredient provides a label friendly way of extending shelf life by delaying the onset of rancidity in mayonnaise, dressings, margarine and fat spreads.
